Binchōtan


Binchō-tan (bahasa Jepang: 備長炭), juga disebut arang putih atau binchō-zumi, adalah sebuah jenis arang yang biasanya dipakai dalam hidangan Jepang. Pemakaiannya bermula pada zaman Edo. Pada era Genroku, seorang perajin bernama Bichū-ya Chōzaemon (備中屋 長左衛門) mulai membuatnya di Tanabe, Wakayama. Bahan mentahnya adalah oak, khususnya ubame oak (Quercus phillyraeoides), sekarang pohon resmi Prefektur Wakayama. Wakayama masih menjadi produsen besar arang kualitas tinggi, dengan kota Minabe, Wakayama menghasilkan binchō-tan lebih banyak ketimbang kota lain di Jepang.
