Taumatin adalah protein yang berfungsi sebagai pemanis berkalori rendah dan pengubah rasa.[3] Thaumatin pertama kali ditemukan sebagai campuran protein yang diisolasi dari buah katemfe (Thaumatococcus daniellii) dari Afrika Barat. Beberapa protein thaumatin 2000 kali lebih manis daripada gula biasa. Walaupun sangat manis, rasa thaumatin berbeda dari gula. Kemanisan thaumatin terasa secara perlahan. Rasa manis akan terasa untuk waktu yang lama dan akan meninggalkan rasa seperti akar manis jika dikonsumsi dalam jumlah besar.
Thaumatin dapat larut dengan mudah dalam air, stabil terhadap pemanasan, dan stabil pada kondisi berasam.
