Invertaza


Invertaza je enzim koji razlaže disaharidni šećer saharozu na fruktozu i glukozu. Dobijena smjesom fruktoze i glukoze se zove obrnuti šećerni sirup. Alternativni nazivi za invertazu uključuju: EC 3.2.1.26, saharaza, glukosukraza, β-h-fruktozidaza, β-fruktozidaza, invertin, sukraza, maksinvert L 1000, fruktozilinvertaza, alkalna invertaza, kisela invertaza, uz sistemsku oznaku: β-fruktofuranozidaza.
Osim invertaze, hidrolizu istog šećera katalizira i sukraza. Naime, i invertaze i sukraze hidrolizuju saharozu, dajuči istu mješavinu glukoze i fruktoze. Invertaze kidaju OC (fruktoza), a sukraze OC (glukoze) veze.[1][2]
Za industrijsku upotrebu, invertaze se obično dobijaju iz kvasaca. Također je sintetiziraju i pčele, koji ga koriste da bi od nektara dobile med.[3][4][5]
Optimalna temperatura na kojoj je brzina hidrolitske reakcije najveće je 60 °C, a optimalni pH je 4,5. Tipski, šećer se revertira sumpornom kiselinom.
