Lutein je ksantofil i jedan od 600 karotenoida koji se javljaju u prirodi. Lutein sintetiziraju samo biljke i, poput drugih ksantofila, u velikim količinama se može naći u zelenom povrću poput špinata i žute mrkve. Pored β-karotina je najrasprostranjeniji karotenoid.
Označava se E-brojem E161b i koji se koristi kao aditiv u hrani za njeno bojenje.
