Palmitinsyre

Palmitinsyre, også kaldet hexadecansyre, er en mættet fedtsyre med den kemiske formel C16H32O2. Den forekommer naturligt i animalske og vegetabilske fedtstoffer og er en af de mest udbredte mættede fedtsyrer.[1]

Palmitinsyre har et relativt højt smeltepunkt (62,9 °C). Natriumsaltet af palmitinsyre bidrager til sæbers hårdhed og faste konsistens.[2]

Palmitinsyre hører til gruppen af mættede fedtsyrer, fordi kulstofatomerne i kulstofkæden udelukkende er bundet sammen med enkeltbindinger.[1]
