Stroganina
Stroganina (russisk строганина, direkte oversat "spåner"[1]) er en ret fra det nordlige Sibirien. Den består af lange, tynde rå skiver ("spåner") af frossen fisk.[1][2][3] Retten serveres på is og drikkes ofte sammen med vodka.[2][4][5]
I området omkring Bajkalsøen kaldes retten raskolotka.[1] Traditionelt laves stroganina af ferskvands-laksefisk[3][6] fra de arktiske sibiriske vandområder som Stenodus nelma, Coregonus muksun, Coregonus nasus eller Coregonus migratorius.[7][8] Sjældnere anvendes fisk af størfamilien. Spisen er populær blandt de sibiriske folk[6] og kendes blandt andet fra det jakutiske[9] og det inuitiske køkken.
