Lo caçolet (var. cassolet), o mongetada es una especialitat culinària de Lengadòc que conten principalament mongetas e carn.
Una legenda raconta que l'origina del caçolet remonta a la Guèrra de Cent Ans : quand los angleses èran en Lengadòc, los pageses de Castèlnòu d'Arri avián pas que qualques mongetas e un pauc de salsissa per manjar e aguèron l'idèa de getar aquela noiridura dins un plat de tèrra cuècha. Aquel plat s'apèla la caçòla.
Tres vilas, Castèlnòu d'Arri, Tolosa e Carcassona, se disputan l'origina del caçolet. Caduna de las vilas a una recèpta pròpria amb d'ingredients diferents.
Segon Prospèr Montanhièr (Prosper Montagné), un famós cosinièr lengadocian : Lo caçolet, es lo Dieu de la cosina occitana; Dieu lo Paire, es lo caçolet de Castèlnòu d'Arri, Dieu lo filh es lo de Carcassona e lo Sant Esperit lo de Tolosa.
