En solucion qu'adopta ua forma ciclica, sia furanòsa (forma majoritàtria dab 4 carbònis e un oxigèn), sia piranòsa (de 5 carbònis dab un oxigèn).
La fructòsa qu'ei presenta, com lo son nom ac bemba, dens los fruts e la mèu.
Associada dab ua glucòsa per un ligam osidic, que produseih la sacaròsa (lo sucre de cosina).
