Ime Evstahij izhaja iz latinskega imena Eustachius z različico Eustatius, to pa iz grškega Eυσταχιoς (Eustahios), ki je zloženo iz beed ευ (eu) v pomenu »dobro, prav, srečno, lepo« in σταχυς (stahys) »klas, sad, zarod, otrok«.[1]
