Xinomavro (tiếng Hy Lạp: Ξινόμαυρο [ksiˈno̞mavro̞], nghĩa đen là 'đen chua') là giống nho làm rượu vang đỏ chính của vùng cao nguyên Naousa thuộc đơn vị hành chính Imathia và xung quanh Amyntaio, ở Macedonia, Hy Lạp.[1][2] Giống nho này chủ yếu được trồng ở Naousa, Goumenissa, Amyntaio, Rapsani, Trikomo, Siatista, Velventos, và ở quy mô nhỏ hơn, trên núi Athos, tại Ossa, Ioannina, Magnesia, Kastoria và Trikala. Năm 2010, tổng diện tích canh tác toàn cầu là 1.971 ha (4.870 mẫu Anh)[3] và hoàn toàn nằm ở Hy Lạp, nhưng đến năm 2013, con số này đã tăng lên 2.239 ha (5.530 mẫu Anh) trên toàn thế giới, với một số diện tích trồng ban đầu ở Cam Túc, Trung Quốc.[4]
Vùng rượu vang
Rượu vang đỏ làm từ nho Xinomavro ở vùng Naousa đã trở thành một trong những loại rượu vang quan trọng và được đánh giá cao nhất của Hy Lạp. Chỉ định nguồn gốc được bảo hộ (PDO) Naousa được thành lập vào năm 1971 và quy định việc sử dụng 100% nho Xinomavro. Những ví dụ tốt có thể để lâu được nhờ độ axit và hàm lượng tannin cao của rượu, và có thể tương tự như rượu vang làm từ nho Nebbiolo đến mức người ta thường so sánh với Barolo nổi tiếng của Ý.[5] Ở Goumenissa, nho này thường được pha trộn với nho Negoska để tạo ra những loại rượu vang rất nhiều trái cây với nồng độ cồn cao.[6]
Trong những năm gần đây, việc ủ rượu vang đỏ Xinomavro nhân tạo đã trở thành chủ đề nghiên cứu cho một số mục đích.[7]
