As a true freshman at BYU in 2018, he played in 12 games and had 19 receptions for 235 yards and a touchdown. Holker spent 2019 and 2020 on his mormon mission and did not play football.[3] He returned in 2021 to play in 13 games and recorded 14 receptions for 200 yards and a touchdown. After playing in three games in 2022, he entered the transfer portal.[4] In December 2022, Holker announced he was transferring to Colorado State University.[5] He became the starting tight end at Colorado State in 2023.[6][7] In 2023, Holker was one of three finalists for the Mackey Award which is awarded to the nation's best tight end.[8]
Holker signed with the New Orleans Saints as an undrafted free agent on April 27, 2024.[11] He was also selected by the Birmingham Stallions in the fifth round of the 2024 UFL draft on July 17.[12] Holker was one of four Saints UDFAs to make the team's initial 53 man roster.
