Phô mai Harzer là một loại phô mai sữa chua của Đức được làm từ sữa đông ít béo,[1] có nguồn gốc từ vùng núi Harz phía nam Braunschweig.[2]
Harzer thường nhỏ và tròn, trong trường hợp đó nó được gọi là Handkäse hoặc Taler, hoặc hình trụ, trong trường hợp đó nó được gọi là Stangenkäse. Thông thường, loại nhỏ và tròn được bán trong bao bì hình trụ, khi đó được gọi là Harzer Rolle.[1]
Phô mai Harzer thường được tẩm gia vị thì là. Một số loại là phô mai mốc trắng, một số khác là mốc đỏ; loại sau thường có hương vị mạnh hơn. Cả hai loại đều phát triển mùi thơm mạnh sau khi ủ từ vài ngày đến vài tuần. Harzer có cả mùi và hương vị đặc trưng mạnh mẽ.
