Sohan (Persia: سوهان, romanized: Sôhân) adalah permen tofi renyah berperasa saffron yang dibuat secara tradisional dari Persia atau Iran. Hidangan ini dibuat dari bahan-bahan yang terdiri dari kecambah gandum, tepung, kuning telur, air mawar, gula, mentega atau minyak sayur, saffron, kapulaga, dan irisan almond dan pistachio.[1]
Sejarah dan varian
Sohan berasal dari Qom, Iran. Diketahui ada berbagai jenis Sohan seperti Sohan Madu, Sohan Wijen, Sohan Halwa, Sohan Almond, Sohan Gazi, Sohan Loghmeh, Sohan Mentega, Sohan Pashmaki (permen kapas) dan Sohan Dessert. Beberapa orang percaya bahwa ketika Naser al-Din Shah Qajar melakukan perjalanan ke Qom dan dijamu dengan Halwa Qomi, Ia mengibaratkannya dengan parutan (hal ini dikarenakan kata Sohan berasal dari bahasa Persia yang berarti parutan atau kikir) yang mencerna makanan yang telah dimakannya dengan sangat baik.[2]
